BROUILLY
The plot is located in the town of Quincié in Beaujolais, on the mountain of Saburin. It faces Mont Brouilly and culminates at an altitude of 500 m. The plot is planted on sandy soil with a granite subsoil.
This Gamay was planted in 2000, conducted in a goblet style, trained on stakes, at a density of 10,000 vines / ha.
Vinification in whole bunches: after vatting in a wooden vat, alcoholic fermentation takes place under the action of indigenous yeasts. The vinification is without input, aiming for a gentle extraction, thanks to pumping over and light punching down.
Total maceration of 2 to 3 weeks. Aging for 18 months in Burgundy barrels.
Neither filtered nor fined.
