SAVIGNY PREMIER CRU LES LAVIÈRES
The vines are located in the town of Savigny-Lès-Beaune, halfway up the slopes. South-South-East orientation.
The predominantly clay-limestone soils are placed on a subsoil made up of lavières. The Pinot noir used for this cuvée comes from a mass selection planted in 1954.
Vinification in whole bunches: after vatting in a tapered wooden vat, alcoholic fermentation takes place under the action of indigenous yeasts. The vinification is without input, aiming for a gentle extraction, thanks to pumping over and light punching down.
Total maceration of 2 to 3 weeks. Aging for 18 months in Burgundy pieces.
Neither filtered nor fined.
