BEAUJOLAIS

The plot is located in the town of Denicé. The plot is planted on sandy soil with a granite subsoil.

This Gamay is grown in a goblet, trained on stakes, at a density of 10,000 vines / ha.

Vinification in whole bunches: after vatting in a wooden vat, alcoholic fermentation takes place under the action of indigenous yeasts. The vinification is without input, aiming for a gentle extraction, thanks to pumping over and light punching down.

 Total maceration of 2 to 3 weeks. Aging for 18 months in Burgundy barrels.

 Neither filtered nor fined.
