AMPHORE BOURGOGNE ROSÉ PINOT GRIS
The Bourgogne Côte Saint-Jacques vineyard is located between 135 m and 210 m altitude, on the hillside looking towards the south-east. The vines draw their nutrients from the chalk formations of the Upper Turonian, characterized at the base by a white chalk with flint, evolving towards a chalk without flint towards the top.
Manual de-stemming 100% by vatting in a Georgian Kveri amphora. Then, maceration for 2 to 3 weeks of the "infusion" type until the end of alcoholic fermentation. Gentle pressing in a vertical press then pouring into an amphora for a one-year aging.
Neither filtered nor fined. No added sulfur.
