Méthode ancestrale
Young vines from Montserre, planted in the town of Chichée, at an altitude of 400 m.
The plot, covering 50 ares, is located on a plateau at the top of a hill made up of greenhouses forming a base of limestone bedrock under a very hard limestone foliage.
Vinification without input. Alcoholic fermentation under the action of indigenous yeasts followed by a light static cold settling. At the end of fermentation, cool down to lull the yeasts and clarify the wine.
Bottling in a capsule and end of fermentation in the bottle (ancestral method). 18 months on latte. Without disgorging.
